- 1 lb pork loin
- 1/2 lb spaghetti noodles
- 2 red bell peppers
- 2 green bell peppers
- 2 carrots
- 1 head of broccoli
- 1 yellow onion
Peanut Sauce
- 1/2 cup sesame oil
- 1/4 cup sun butter
- 1.5 tbsp honey
- 1/4 cup tamari
- 1/4 cup rice wine vinegar
Pre-heat the oven to 350 degrees F
Drizzle olive oil, salt and pepper on the pork loin
Roast the pork loin for 1 hour or until the internal temperature reads 145 degrees F. Slice the pork.
Cook the spaghetti until tender
Cut and sauté vegetables until tender
Combine all of the peanut sauce ingredients into a bowl and mix well
Add the sauce to the noodles and top with the sliced pork loin
